Vegan Thai Tofu Curry

Ingredients

  • 1red onionsliced
  • 2garlic clovescrushed
  • Thumb sizedpiece of gingerfinely chopped
  • 1lemon grass stalk(prep instructions below)
  • 1tspground coriander
  • 1/2tsppaprika
  • 1/2tspcayenne pepper
  • 1red chillideseeded and chopped
  • 400gfirm tofupressed and chopped into chunks
  • 1red pepperroughly chopped
  • 1head of broccoli
  • 1400gcan chickpeasdrained and rinsed
  • 2400mlcans coconut milk
  • 1tbsptamari
  • Handful fresh basil
  • Handful mange tout
  • Handful spinach

Instructions

  • Heat a pan with oil or copra oil and add within the onion, garlic, ginger, spices, red hot pepper and also the lemongrass (chop the ends off bash with the facet of your knife and slice down the center from prime to bottom, this releases all the flavour) and fry along for a few minutes
  • currently add the shredded curd, broccoli, pepper and fry for an extra minute
  • Add the chickpeas, coconut milk and Tamari and stir. permit this to cook on a medium heat for around 8-10 minutes
  • Finally add the basil, animal disease tout and spinach to wilt down and it’s able to serve
