Kerikeri New Zealand Corn Salad
Ingredients
- 2 cups cooked sweet corn
- 1 cup cooked green peas
- 1 cup diced cucumber
- 2 tablespoons chopped green onions or 2 tablespoons chives
- 1 garlic clove, minced
- 1⁄4 cup salad oil
- 2 tablespoons vinegar
- salt & pepper
- cayenne pepper
Instructions
- Drain the parched vegetables well and blend with the cucumber.
- Shake the oil & vinegar along in an exceedingly screw high jar with salt & pepper, cayenne pepper, minced garlic and inexperienced onions and dress the vegetables with this, moving gently till all ar coated.
- Serve cold.
