Pea and feta quinoa salad
Ingredients
- 1cupquinoa
- 1 cup Bulgur wheat
- 6cupswater/stock
- pinch of salt
for the salad
- 3cupsfrozen peasblanched
- 1-1½cupscrumbled feta cheese
- 1largered onionthinly sliced
- pea tendrils, for serving(optional)
for the lemon dressing
- ¼cupolive oil
- ¼cuplemon juice
- 1tspsalt
- ½tspblack pepper
Instructions
- mix the quinoa, wheat and stock/water during a pan and season with salt. wake up a boil and simmer uncovered till the liquid has been absorbed. flip the warmth off and canopy with a lid then permit to steam for 10-15 minutes till the quinoa grains area unit hard. Fluff with a fork and permit to chill to temperature.
- mix the parched quinoa and wheat with the parched and cooled peas, feta cheese and onion.
- combine along the dressing ingredients then pour over the dish.
- Add the pea tendrils if serving now otherwise keep the dish lined within the refrigerator for up to five days.
