Pani Popo (Samoan Coconut Rolls)
INGREDIENTS
- 12-20 frozen dinner rolls depending on size (see note above for homemade rolls)
- 1 10 oz. can coconut milk
- 1 c. sugar
INSTRUCTIONS
- Coat a 9x13 glass baking dish with change of state spray and organize rolls equally to thaw (if doing do-it-yourself rolls, roll dough into golf-ball size balls and organize a similar way).
- cowl with wrapper sprayed with change of state spray (to keep dough from jutting to the plastic wrap).
- permit to rise till doubled in size. this may take 4-5 hours. If you wish the rolls to thaw faster, follow the quick-rise directions on the frozen roll packaging.
- Pre-heat kitchen appliance to 350-degrees.
- In a bowl, mix coconut milk and sugar and whisk till sugar is dissolved.
- Pour concerning 2/3 of the coconut mixture over the rolls and bake for 20-30 minutes (or in line with package/dough instruction instructions) or till golden brown and dough is baked through.
